This lavender toast will make fighting stress your new jam

Each bite combines the flavors of blackberries, raspberries, blueberries, and of course lavender. Even better? The toast is layered with fruit jam that’s blended with cream cheese, which creates a colorful ombre effect that we are completely obsessed with. Finish the recipe off with your favorite toppings, like pomegranate seeds and even more lavender.

Stress-Fighting Lavender Toast
Ingredients:
1 pt. fresh blueberries
6 Tbsp. granulated sugar, divided
6 Tbsp. water, divided
4 tsp. dried culinary lavender, divided
2 pt. fresh blackberries
2 pt. fresh raspberries
1 1/2 cups whipped cream cheese
2 (1 1/2-oz.) sandwich bread slices, toasted
2 Tbsp. pomegranate arils
1 tsp. crushed dried blueberries
Recipe:
1. Combine blueberries, 2 tablespoons of the sugar, 2 tablespoons of the water, and 1 teaspoon of the lavender in a medium saucepan. Bring to a boil over medium-high. Reduce heat to medium-low, and simmer, stirring occasionally, until berries have broken down and mixture is syrupy, 5 to 8 minutes. Pour mixture through a fine wire-mesh strainer into a bowl, mashing blueberry mixture to release juices. Discard solids. Set aside, and cool completely. Repeat procedure twice using blackberries and raspberries.
2. Place 1/2 cup of the whipped cream cheese in each of 3 bowls. Add each cooled berry syrup to each bowl. Beat each with an electric mixer on medium speed until completely combined and color is vibrant, about 1 minute.
3. Spread 1 tablespoon of the blueberry mixture on bottom third of each toast slice. Spread 1 tablespoon of the blackberry mixture on middle third of each toast slice, and spread raspberry mixture on top third of each toast slice. Using a small offset spatula, gently spread edges of colors together just until colors begin to blend, creating an ombre effect. Reserve remaining cream cheese mixtures for another use.
4. Top each toast slice with 1 tablespoon of the pomegranate arils, 1/2 teaspoon of the crushed blueberries, and 1/2 teaspoon of the lavender. Serve immediately.
