The Best Thing You’ll Eat Maybe Ever: Grain-Free, Refined Sugar-Free Blueberry Crumble

Y’all know I keep it real on the no grain/no refined sugar tip, but as a recovering sugar addict in all its forms, I’m always looking for ways to make sweet things that are healthier than their over-processed and really-bad-for-you counterparts. I live for crumble – doesn’t even matter what fruit’s with it – and knew there had to be a way I could indulge in this despite my new dietary limitations.

The short answer? Of COURSE there’s a way. A delicious way that is not only as good as the original, it might even be just a little bit better – seriously, I promise! This is so good that I had to literally hide it from myself on a very high shelf to keep myself from eating the entire 8×8 tray in one day.

Right, let’s stop wasting time and get down to it, shall we? Here’s a list of ingredients you’ll need (aside from the 8×8 tray I mentioned in the last paragraph):

  • 1 1/2 cups almond flour (I prefer unblanched for this particular recipe, but either will work!)
  • 1 cup unsweetened shredded coconut
  • 1 cup chopped pecans
  • 1/4 tsp sea salt (or table salt)
  • 1/3 cup melted coconut oil or butter
  • 1 tsp vanilla extract (pure, not imitation if you can help it!)
  • 1/8 – 1/4 cup pure maple syrup*
  • 1 pint blueberries

Note: You can adjust the sweetness on this to your liking. 1/4 cup of maple syrup is probably better (and is what I used), so I recommend that, but go with what feels right in your heart. We’re all about following your own path here at HG (ha).

As for the method, it’s incredibly simple!

Step 1: Pre-heat your oven to 350F and grease your 8×8 pan – I prefer to spray a little Trader Joe’s coconut oil spray on it and it does the trick nicely. You can then toss all your blueberries in, covering the bottom (and then some, probably).

Step 2: In a mixing bowl, combine all your dry ingredients, stirring them up a bit before tossing your wet ingredients (minus the blueberries, of course) in the same bowl. Stir this together until it forms a wet crumble texture, then spread it evenly over your blueberries in the baking pan.

Step 3: Throw it in the oven for about 30-35 minutes, and voila!

I seriously could only wait about 10 minutes after taking this out of the oven before I had to dig in and holy sh*t, it’s one of the best things I have ever eaten. Seriously. I know I seem to be saying that a lot lately, but it’s just because it’s true! IT’S SO DELICIOUS, GUYS.

You can eat this on its own or maybe even add a little ice cream into the mix – non-dairy, of course. I did mine up with Arctic Zero Vanilla Maple flavour and it was amazing.

Make this! Do it for yourself and your taste buds, but also do it for me so you can come back raving about how good it is and I can say, “I told you so!” because yes, I’m a brat and also, IT’S SO GOOD!
