Starburst Pancakes
Serves 6 (serving size: 4 pancakes)
Active 1 hour Total 1 hour
Ingredients
20 red Starburst candies, unwrapped
20 pink Starburst candies, unwrapped
20 orange Starburst candies, unwrapped
20 yellow Starburst candies, unwrapped
1 cup whole milk, divided
1 cup heavy cream, divided
3 cups complete pancake mix
Red, pink, orange, and yellow liquid food coloring
Butter and pure maple syrup for serving
Directions
1. Place unwrapped red Starbursts into a small saucepan over medium-high heat. Add 1/4 cup of the milk and 1/4 cup of the heavy cream. Cook, whisking constantly, until Starbursts are melted, about 5 minutes. Pour mixture into a glass bowl, and let cool 10 minutes. Clean saucepan, and repeat with each of the remaining Starburst colors, milk, and cream. You will have 4 bowls, each with a different colored mixture.
2. Stir in 3/4 cup of the pancake mix to each of the 4 bowls. Whisk 1 to 2 drops of the corresponding food coloring into each bowl until combined, adding a bit more water or milk as needed.
3. Heat a griddle or a nonstick skillet over medium to 300°F. Spray with cooking spray. Ladle about 1/4 cup of batter per pancake to hot griddle; cook until beginning to brown, 1 to 2 minutes per side. Serve immediately with butter and syrup.
