We’re shore you’ll love this beachy mermaid ombré cake
We’re sending off summer in style with this ombré cake! Lightened with lemon and sporting a maritime palette, it’s the perfect candidate to pack to a beach picnic, or summer-themed party. While baking an ombré cake might seem tricky at first, it’s actually SUPER easy — and fun!

Mermaid Ombré Cake
For the cake:
Ingredients:
1 cup butter
2 cups sugar
5 egg whites
2 tsp vanilla extract
1 cup flour
1 tbsp baking powder
1/2 tsp salt
1 cup milk
2 (more) cups flour
blue food coloring
Directions:
Preheat the oven to 350 degrees.
Combine all ingredients in a bowl in order shown above.
Divide mixture evenly between five round baking pans (5 inch, greased and floured).
In four of the five baking pans, incorporate increasing levels of food coloring, until desired colors are reached.
Bake for about 20 minutes.
For the buttercream frosting:
Ingredients:
1 1/2 cups butter
1/4 cup heavy cream
1 tsp lemon extract
6 cups powdered sugar
Directions:
Combine all ingredients in a bowl.
Spread evenly between each cake layer, then all over the cake!
For the “sand” topping:
Ingredients:
3 crushed graham crackers
10 crushed Nilla wafers
1 tbsp brown sugar
Directions:
Combine all ingredients in a bowl.
Sprinkle on top and enjoy!
