Peanut Butter Pickle Popsicles

Serves 15 (serving size: 1 [3-oz.] popsicle)
Active 30 min. Total 4 hours, 30 min.

Ingredients

3 cups dill pickle juice
1/2 cup water
1/2 cup granulated sugar
1 cup seeded and chopped dill pickles
1/2 cup coconut oil
1 oz. peanut butter chips (such as Reese’s)
3 cups roasted and salted peanuts, chopped

Instructions

1. Combine pickle juice, water, and sugar in a small saucepan over medium. Cook, stirring often, until sugar dissolves. Remove from heat.

2. Place 1 tablespoon of the chopped pickles into each popsicle mold. Pour pickle juice mixture evenly into each mold. Insert popsicle sticks, and freeze 30 minutes to 1 hour. Adjust popsicle sticks, and freeze until completely frozen, about 4 hours.

3. Prepare the magic shell: Combine coconut oil and peanut butter chips in a microwavable bowl. Heat in 30-second intervals, stirring after each, until mixture is melted and incorporated.

4. Dip popsicles into magic shell, and sprinkle with chopped peanuts before it dries. Serve immediately, or place on a sheet tray and return to freezer.
