It’s National Pie Day, so here are 8 easy pie recipes to bake while you’re snowed in
It’s National Pie Day! Why are we all not eating pie right now? I’ve been baking pies for the wrong holiday, the mathematically beloved and equally awesome Pi Day. But hey, now there’s yet another excellent excuse to eat some delicious pie! Guys, it’s a holiday. Bring out the forks. I’ll grab the whip cream.
In honor of this esteemed holiday (way more tasty than yesterday’s National Polka Dot Day), below, in no particular order, are eight easy pie recipes even the klutziest of cooks can bake!
1. Peanut Butter Pie
Described as tasting “like a massive peanut butter cup from heaven,” this pie is a must-try for any baker craving some peanut butter cup tastiness, with a crunchy yet buttery graham cracker crust. This is the pie I bring to family gatherings when I want to impress.
2. Black Bottom Oatmeal Pie
I’m a huge fan of Smitten Kitchen‘s recipes, so of course my interest was piqued when she posted the recipe for something called “Black Bottom Oatmeal Pie” in honor of National Pi Day. As she writes, “But if you haven’t made this oatmeal chocolate cookie meets pecan pie, no need to wait for a holiday invented by food media for an excuse.” I mean, just look at it. Yum. And we can tell ourselves it has health benefits thanks to the oatmeal, right?
3. Buttermilk Pie
My fiance loves himself some buttermilk pie, so any list I make regarding pie that does not list buttermilk pie would be sacrilegious. One of my favorite traits of buttermilk pie is just how easy it is to make. The recipe basically just involves mixing together eggs, buttermilk, flour, vanilla, and a whole lot of sugar — it’s more of a custard than a pie, really. And it’s suuuuuper tasty and moist.
4. Meyer Lemon Curd Tart
Yes, I know this is a “tart,” but there’s a crust, so I still consider it a pie of sorts, and this is a big hit with those crazy folks who claim they don’t “like” pie. I first made this tart (created by Cathy at the Gastronomy Blog) for a friend’s birthday party, and have been prevailed upon by friends ever since to make it for their birthdays. So for those of you who, like your’s truly, love lemon desserts, search no farther. This is the one to make.
5. Caramel Apple Crumble Pie
I love this pie because, as recipe-creator Averie Furukawa claims, it takes less than an hour to make from start to finish. That’s one quick pie! Averie describes this treat as “apple pie meets apple crumble with loads of caramel! The easiest apple pie you’ll ever make. Goofproof 5-minute recipe for those of us who aren’t pie makers!” I don’t even really like apple pie, but I like this one. I mean, you can’t go wrong with caramel.
6. Mississippi Mud Pie
Any excuse for chocolate. This Mississippi Mud Pie has layers and layers of chocolate and an Oreo– yes, Oreo — crust. Just be sure to invite friends over so you don’t eat this whole thing yourself! (Trust me, some of us have done that, and things gets dark after the third slice of pie.)
7. Pumpkin Pie
Just because it’s not Thanksgiving doesn’t mean you can’t enjoy a good slice of pumpkin pie! This particular recipe has crushed gingersnaps in the crust for an even tastier treat. Now all you need is a family argument to break out and it’ll be like Thanksgiving dinner all over again, regardless of the month!
8. “Not Technically A Pie” Lemon Blueberry Whoopie Pie
While whoopie pies are not technically pies, I would feel like a gluttonous monster if I didn’t share the recipe for this delicious dessert! I’m more of a cookie girl myself (though, don’t get me wrong– I love pie!) and when I’m in the mood for a fun “different” type of sugar-delivery-service I whisk up this treat by Sommer over at A Spicy Perspective. Lemons, blueberries, sugar and butter are a match made in heaven. You have to taste it to believe it.
