Meyer Lemon Thyme Bubbly Happiness
Guys, let’s talk about Meyer lemons, okay? Have you had a Meyer lemon? Maybe in a vinaigrette in a restaurant? Or a Haagan Daas Meyer lemon sorbet? That stuff is ridiculously good. But if we’re being honest, everything with Meyer lemon in it is ridiculously good.
Meyer lemons, which are a cross between lemons and mandarin oranges, are these tart and super fragrant citrus fruits that are grown all over California, and then get sent to poor suckers like me who live in rainy places.
You can do nearly everything with them, but you know already that I’m putting them into a drink. A drink with thyme and gin, and something fizzy. And instead of something simple, you get a super complex drink that is deceptively simple to make:
Meyer Lemon Thyme Gin Fizz
Makes 4 Drinks
- 5 Meyer lemons
- 5 sprigs of thyme
- 1 cup sugar
- 4 oz gin
- Bubbly water or champagne
Zest and juice the lemons and put them in a small pot with the sugar and 1 sprig of thyme.
Bring to a simmer over medium heat until all the sugar dissolves. Chill.
Pour 1 oz into 4 glasses. Top with 1 oz of the lemon syrup, and top with bubbles.
Garnish with the remaining sprigs of thyme.
