Stop everything: we’ve all been making grilled cheese wrong. Yes, you still put cheese on two pieces of bread and melt it on your stove top until it’s gooey, cheesy deliciousness. But this is rainbow grilled cheese, and where has it been all our lives?
Next time you ask someone if they would like a grilled cheese sandwich, make them this recipe. They’ll be chill, thinking they’re going to eat a regular ol’ cheese on bread combo, but you’ll get to surprise and delight them with the most colorful sandwich they’ve ever seen. Seriously, put this on your vision board for 2018.
Rainbow Grilled Cheese
Serves 2 (serving size: 1 sandwich)

1/4 cup mayonnaise
Food coloring gel (deep pink, sky blue, mint green, lemon yellow, and violet)
4 hearty bread slices
4 oz. part-skim mozzarella cheese, shredded (about 1 cup)
4 oz. Swiss cheese, shredded (about 1 cup)
1. Stir together mayonnaise and 1 to 2 drops of the pink food coloring gel in a small bowl. Spread 1 tablespoon of the mayonnaise mixture on 1 side of each bread slice, and place on a piece of parchment paper. Turn 2 of the slices over, so that colored mayonnaise sides are down.
2. Toss together cheeses; divide cheese mixture evenly among 4 small bowls.
3. Stir in 2 to 3 drops of the blue gel in 1 bowl, 2 to 3 drops of the green gel in second bowl, 2 to 3 drops of the yellow gel in third bowl, and 2 to 3 drops of the violet gel in fourth bowl. Stir each bowl of cheese and food coloring gel together until well incorporated.
4. Divide colored cheese evenly on 2 of the bread slices, colored mayonnaise side down, making a vertical striped rainbow pattern. Top each with 1 bread slice, colored mayonnaise side up.
5. Heat a griddle to medium (350°F to 400°F). Carefully transfer sandwiches with a spatula to heated griddle. Cook until bread is toasted and cheese has melted, 2 to 3 minutes on each side.
