Vodka Mint Key Limeade
After this bitterly cold winter, my imagination is on overdrive. I am willing myself out of this terrible day by pretending I am somewhere else entirely. A small island, perhaps; somewhere warm definitely. Somewhere I can lie in the shade and still be warm. Somewhere with soft lighting, and some music being played close by, but not too loud. Somewhere with the sound of waves lapping near me. Somewhere quiet, soft and peaceful. I’m thinking there’s a hammock.
That is where I am pretending to be right now.
I am willing myself into this fantasy place, and I am taking this pitcher of vodka mint key lime-ade with me. Tomorrow will be a better day, but today is for planning trips I can’t afford and drinking this cocktail, which belongs somewhere definitively nicer than here.
Vodka Mint Key Lime-ade.
- ½ cup sugar
- ½ cup water
- 3 sprigs of mint, plus more to garnish.
- ½ cup vodka
- ¼ cup key lime juice (or regular lime juice)
- Soda water
In a small pot, mix together the sugar, mint and water. Bring it to a simmer and stir until the sugar has dissolved entirely. Pour this mixture into a jar and put it in the fridge to cool completely.
Fill a large pitcher or jar with ice. Pour over top the vodka, lime juice and mint syrup, straining out the mint.
Mix well and then top with the soda water. Garnish each drink with some mint and some lime slices!
