1Chocolate chip pumpkin bread

I've made this paleo vegan chocolate chip pumpkin bread twice this week, so it's probably time to share the recipe 😉here's what to do: 1️⃣preheat oven to 350F and grease a loaf pan 2️⃣mix together 3 T chia seeds and 1/2 c + 1 T water and let sit 15 min to gel 3️⃣in a large bowl combine 2 1/2 c almond flour, 1/2 c tapioca flour, 1 tsp baking soda, 1/2 tsp sea salt, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp ground ginger, 1/4 tsp allspice and 1/8 tsp cloves 4️⃣in a separate bowl combine 1 c pumpkin purée, 1/4 c any neutral oil (I used a light olive oil), 1/4 c pure maple syrup and 1 T apple cider vinegar 5️⃣add the wet ingredients including the chia gel to the dry ingredients and stir until well mixed. Stir in 1/2 c chocolate chips 6️⃣bake for 50-55 minutes, until the top is firm and a toothpick inserted in the middle comes out clean 💛this pumpkin bread is super rich and moist, and I hope you love it!
