Even though you know, in theory, it will make your life so much simpler and healthier, meal planning can be a huge pain, but cooking some things in bulk ahead of time can totally relieve some of the stress. Now that temperatures are a little cooler, it might even be time to start thinking about some crockpot recipes you can bring to work the next day. What’s not to love about a slow cooked soup or veggie concoction you can reheat in the office kitchen? A hot lunch is never a bad thing, and it’s definitely more comforting than the overpriced salad you buy on-the-go without thinking and don’t even really enjoy.

Home-cooked lunches just make the weekdays more bearable.

Luckily, there are tons of options for simple, slow-cooked meals that are tasty and easy to make. Cooking is more fun when all you have to do is toss a few ingredients in and let the crockpot work its magic. If you’re on a budget, crockpot recipes are always the way to go: You can make a ton and usually have enough left over to freeze for sometime when you just can’t deal with cooking.

Here are a few good ideas for crockpot dishes that will make good lunches the next day. And make all of your coworkers jelly.

1Lablabi (Middle Eastern Spicy Chickpea Stew), by creamtea

This tasty vegan stew hits all the right spots: It’s healthy, cheap, and filled with flavor. It also makes great leftovers, which means you can use it to dress up (or dress it up) other dishes throughout the week.

2Slow cooker salmon, by Kitchn

Yes, you can cook fish in a slow cooker. You’re going to want to do this by feel and gut instinct, but with a few lemons, you can cook a whole salmon to add to a salad of your choosing the next day. Whatever you do, though, do not reheat this thing in an office microwave unless you want to be made fun of later.

Meatballs are a classic crockpot dish, and they always taste good. You can eat them alone, throw them in a roll, or go authentic Italian and serve them over rice or pasta. Meatballs are LIFE.

4Slow cooker Chex Mix, by Gimme Some Oven

Did you even know you could do this? Sometimes you need a snack at work, in addition to your lunch. If you make batch of homemade Chex Mix, you’re sort of winning at life.

Who needs to order out when you can make your own delicious chicken tikka masala right at home? Make yourself a little peas pulao and go to town.

Forget $9 burritos from a chain restaurant — you can whip this up the night before and then add your own avocado slices to taste. No extra charge. Don’t forget the cheese.

7Vegan red curry, by Delish Knowledge

Throw some veggies together with a little coconut milk and red curry sauce and you have yourself a lunch worth actually getting up from your desk to eat.

8Lemony Chicken And Orzo Soup, Delish

It’s going to be autumn soon, which means it’s officially soup season. Feel free to skip the chicken broth and sub in a veggie stock to keep this vegetarian. It will be just as tasty come lunch time.

Make the chicken ahead of time, get yourself a fluffy-ass pita, and whip up some tzatziki (which is always good to have in the fridge anyway) and you have yourself a ridiculously yummy meal.
