February 28th is Fat Tuesday, or Mardi Gras in French, which also happens to be Pancake Day.

Known as Shrove Tuesday in the British Commonwealth, it’s the day before Ash Wednesday, or the first day of Lent. The idea is to eat richer, fatty, indulgent foods before the ritual fasting of the Lenten season.

On the day-to-day, the Brits aren’t generally big pancake people, except for one big cakey breakfast blow-out on Pancake Day.

To that end, we’ve compiled some recipes that will appropriately serve the ultimate purpose of the significant holiday that begets the need for another (we’ll all need a day of rest after gorging on the stacks).

1 King Cake Pancakes

King Cake, with its Western Christian history, is the cornerstone treat of Mardi Gras. This recipe takes King Cake’s traditional flavors and mixes it into pancake batter for an ultimate Fat Tuesday breakfast.

2 Strawberry Greek Yogurt Pancakes

These strawberry greek yogurt pancakes are made with greek yogurt for some extra fluff.

3 Cake Batter Funfetti Pancakes

Cake mix and sprinkles make these pancakes both super fun and insanely indulgent. Dessert as breakfast is, after all, everyone’s dream.

4Rainbow Pancakes

Because Mardi Gras is basically what life is like inside of a rainbow: it’s a color explosion!

5Carrot Cake Pancakes with Maple-Cream Cheese Drizzle

A Bobby Flay recipe with pumpkin pie spice, buttermilk, orange zest, candied ginger, oh my.

6Nutella Stuffed Pancakes

Because obviously if you’re making a sweet breakfast treat, it’s got to have nutella.

7Maple Bacon Pancakes

Pure maple syrup and crispy bacon crown this the king of all pancakes.

8White Chocolate Macadamia Nut Pancakes

In case we haven’t gotten decadent enough for you yet, here’s a pancake that tastes like a cookie.

9S’mores Pancakes

Now we’re just getting crazy. TheseĀ graham-cracker buttermilk pancakes with chocolate and marshmallows look amazing.

10Hot Chocolate Pancakes

We can barely even look at these without needing a nap. Rich chocolate buttermilk pancakes with a thick chocolate fudge topping and garnished with mini marshmallows = whaaaat.

11The Blueberry Pancakes of Your Dreams

Okay, let’s tone it down a little bit with these thick, fluffy stacks with all the blueberries. ALL OF THEM.
