Thanks Jack White, for the awesome guacamole recipe

Much has been made of Jack White and William Morris Entertainment refusing to do any more business with Oklahoma University after the student newspaper published White’s contract (also called a “rider”) which stipulated the following requests: a pound of “sliced, high-quality prosciutto,” no bananas ANYWHERE, and a large bowl of chunky guacamole to be delivered to the band’s dressing room at 5pm.

Now, these may seem like diva demands, but in fact, most musical acts put odd asks like these into their riders not to be jerks, but as a safety precaution. You see, riders are long and dense documents that have a lot to do with tech stuff for the performance, and so slipping in these weird requests is an artist’s way of making sure that the venue read through the entire thing and didn’t skim. Because skimming can lead to, like, electrocution and heavy objects falling from the ceiling and lots of other bad stuff you don’t want to happen at a concert (or ever).

So let’s give White & Co. a break, they were just doing what all major musical acts do: making sure their contract is carefully read and completely upheld.

Jack White’s “Concert Guacamole”

-8x large, ripe, Hass avocados (cut in half the long way, remove the pits — SAVE THE PITS THOUGH — and dice into large cubes with a butter knife. 3 or 4 slits down, 3 or 4 across. You’ll scoop out the chunks with a spoon, careful to maintain the avocado in fairly large chunks. )

-4x vine-ripened tomatores (diced)

-1/2x yellow onion (finely chopped)

-1x full bunch cilantro (chopped)

-4x Serrano peppers (de-veined and chopped)

-1x lime

-Salt & pepper to taste

Mix all ingredients in a large bowl, careful not to mush the avocados too much. We want it chunky. Once properly mixed, add the pits into the guacamole and even out the top with a spoon or spatula. Add 1/2 lime to the top layer so you cover most of the surface with the juice. (The pits and lime will keep it from browning prematurely.) Cover with plastic wrap and refrigerate until served. Please don’t make it too early before it’s served. We’d love to have it around 5 p.m.)
