Here’s what you can do with that old pumpkin sitting around from Halloween

Okay, we’ll admit it. We maybe, kinda sorta, okay, definitely forgot about that old pumpkin we got for Halloween. What?! We were so happy to get it, and we carved our pumpkins as we drank our PSLs and sang “The Monster Mash,” but then we shoved it on the porch and forgot all about it. Now we have a really, really old pumpkin, and we’re not sure what to do with it. We don’t like letting things waste away! So we were pretty darn stunned to find out that this creative Instagram foodie has an amazing answer to old pumpkins.

What should we do with that old pumpkin? EAT IT. No, really!

Yovana Mendoza of Rawvana explained in a new Instagram post that these seemingly ancient pumpkins are actually still edible, and the result honestly sounds yummy!

"Sweet Pumpkin! Yes this pumpkin has been here since October and it's still good can you believe it😆🎃!? Cut off the top part and took everything out from inside (put the seeds in the oven with tamari and paprika to toast-makes a great snack!)."

"Cooked the insides with cinnamon, dates and coconut sugar for about 20 minutes so the flavors really soak in to the pumpkin."

See? Aren’t you glad you saved that old thing? TG for this health and fitness guru for this genius pumpkin recipe. Now we’ll feel a wee bit better about letting our pumpkin hang out all by itself for the last month. Here’s to repurposing in genius ways!
