And the gold medal goes to… these delicious Olympics-inspired sugar cookies!

Ah, the Summer Olympic Games. A glorious short-lived season every four years to celebrate our nation’s most miraculously toned specimens and cheer on their physical accomplishments.

But what about the rest of us, sitting on our couch vegging out and watching? Don’t we deserve gold medals too??

Sure we do. And ours shall be delicious. Behold, Olympic Medal cookies for all!

Sugar cookies:

1 cup butter
1 1/2 cup sugar
1 tsp vanilla extract
1 egg
1/2 tsp baking powder
1 tsp baking soda
2 3/4 cup of flour

Preheat oven to 375°F.

Mix room temperature butter and sugar together until smooth. Add vanilla and the egg and stir. Add in baking powder and soda, and then slowly mix in the flour until fully incorporated. Allow the batter to cool in the fridge for 30 minutes. Roll flat, and cut out with cookie cutters. Bake for 12 minutes, and allow to cool for 5 minutes before transferring to cooling rack.

Icing:

1 egg white
1/2 tsp vanilla extract
2 cups powdered sugar

Add all ingredients in a large mixing bowl and whip until smooth.

Gold coating:

Gold Lustre dust
Lemon extract or vodka (or other grain alcohol)

Mix equal parts lustre dust and lemon extract. Use a fine tipped paintbrush to apply to cookie.

To assemble:

Bake cookies, cover with icing, cut out fondant with cookie cutter, lay fondant on top of icing. Cut rings out of fondant and apply to cookie with a dab of water. Pipe icing for border. Paint with lustre dust.
