We’re making eggnog cupcakes for Santa (OK, they’re for us)
Tis the season for holiday goodies galore from cookies to fruitcake to figgy pudding (is that actually thing IRL?) and, of course, eggnog.
Oh eggnog, you are the sweet complement to holiday family time, like cozying up by the fire, and again (but this time with Bourbon) when our crazy families discuss what we’re doing after graduation and/or politics. We all need a little pick me up this time of year, and now we can have our eggnog and eat it too . . . as a cupcake! (P.S. just use non-alcoholic eggnog to turn these boozy cupcakes into designated drivers!)
Ingredients
2 ½ cups flour (1 ½ cups all purpose, 1 cup cake flour)
4 teaspoons baking powder
½ teaspoon salt
3 eggs
2/3 cup butter, softened
1 ½ cups sugar
1 teaspoon ground nutmeg
1 teaspoon vanilla
1 cup eggnog
Steps …
Set aside dry ingredients (flour, baking powder, nutmeg and salt). Cream butter and sugar. Blend in eggs and vanilla. Mix in dry ingredients, alternating with eggnog. Bake for 20 minutes at 350 in lined muffin tin.
Ingredients for Frosting
1 cup unsalted butter
3 cups powdered sugar
1/4 teaspoon salt (optional)
2 tablespoons eggnog
Mix together and sprinkle with nutmeg for that extra nog kick!
