National Blueberry Pancake Day is apparently a thing, and there’s still time to celebrate
Craving cake for breakfast? Us too! It’s a good thing plenty of cake-inspired dishes meet breakfast’s unusually low nutritional standards. Think doughnuts, waffles, and the cakiest of them all: the pancake. That’s why when we found out today is National Blueberry Pancake Day, we flipped our lid in celebration.
But a delicious pancake alone does not a healthy breakfast make. Adding even a small serving of fruit to the mix can take your pancake from sugary snack to, well, a slightly healthier sugary snack. But that’s all the mouth-watering incentive we need!
Feast your eyes, flapjack lovers. National Blueberry Pancake Day makes Americans’ stomachs growl with delight by combining the fluffy goodness of pancakes and the super-food-iness of blueberries every January 28th. Not to be confused with Pancake Tuesday (aka Mardi Gras), the origins of National Blueberry Pancake Day are unknown. But we imagine the inspiration for the sweet day may have something to do with loving pancakes, loving blueberries, and loving yourself —starting with pancakes, of course.
Did loving yourself ever taste this good? Probably not.
The recipe for the perfect pancake consists of surprisingly few ingredients. Just combine eggs, milk, flour, baking powder, and vegetable oil together in a mixing bowl. And don’t skimp on the sugar!

Next, heat a lightly oiled frying pan over medium heat and scoop about 1/4 cup of batter per pancake into the pan.
Be sure to add the blueberries right after dropping the batter on the hot griddle. If you stir them in with the other ingredients in the mixing bowl, you may end up with blue pancake batter.
Not that blue batter would stop us from devouring a delicious stack. But still.

Now, just brown each cake on both sides, flipping halfway when you see the batter bubbling. Add butter and syrup to taste, and voila! Don’t forget to top your hotcake tower with fresh blueberries and a spoonful of whipped cream, if you’re fancy. (We’d recommend even more fresh blueberries, too.)
Trust us. Your sweet tooth will thank you.
