Butterbeer Mug Cake

Serves 1 (serving size: 1 mug)

2 Tbsp. salted butter, melted
1/4 cup all-purpose flour
2 Tbsp. light brown sugar
1/2 tsp. baking powder
1/8 tsp. ground cinnamon
Pinch of table salt
Pinch of ground nutmeg
1 Tbsp. vanilla cream soda
1 large egg yolk
1 Tbsp. butterscotch chips
Sweetened whipped cream
Butterscotch topping


1. Add melted butter to 1 (12 oz.) microwavable glass mug. Using a fork, stir together flour, brown sugar, baking powder, cinnamon, salt, and nutmeg in a small bowl until combined; stir mixture into melted butter. Add cream soda and egg yolk; stir with fork until combined and smooth. Gently fold in butterscotch chips.
2. Microwave at HIGH until cake has cooked through, 60 to 90 seconds, checking after 60 seconds. Let cool 10 minutes. Top with whipped cream and butterscotch topping, and serve warm.
