These cookies might not seem like anything on the outside, but they’re healthy and delicious on the inside — making it a game-changer for your mornings. Not only will you now be able to eat cookies for breakfast, but they’re packed full of ingredients like walnuts, rolled oats almond butter, and apples, which will give you the boost of energy you need for your cookie-eating morning.

After eating healthy with these breakfast cookies, you should reward yourself with another cookie for doing such a good job.

Deceptively delicious breakfast cookies

Dry Ingredients:

1 cup whole wheat flour
1/2 cup nutmeg meal
1 1/2 cups of rolled oats
1/4 cup walnuts
1/4 cup toasted, shredded coconut
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
3/4 tsp cinnamon

Wet Ingredients:

1 apple, cored and chopped
1/2 cup creamy almond butter
2 tbsp coconut oil (melted)
1/4 cup honey
1/4 cup brown sugar
1 large egg
1 tbsp vanilla extract


Preheat oven to 350.

In a large bowl whisk together all dry ingredients and set aside. In a blender add all wet ingredients and blend until smooth. Pour wet ingredients over dry ingredients and stir to combine.

Scoop out dough and roll into balls about 2 tbsp in size. Place on prepared baking sheet and flatten slightly into shape of cookie. Cookies won’t expand much while baking, but be sure to still leave at least 1 inch of space between each cookie.

Bake for 8-10 minutes or until golden brown. Allow to cool on rack for 5 minutes.
