On a recent trip to New York, I had the extreme pleasure of visiting the Wafels and Dinges truck, where I consumed one of the most delicious desserts in my recent memory.  It was a waffle covered in speculoos, this ridiculously delicious Belgian spread that is made from cookies.  Yes, a spread made of cookies.  It sounds too good to be true, but it isn’t.

If there is any complaint about this dessert, it would be that it didn’t include chocolate, which is something all desserts should have.  Leave it to Trader Joe’s to solve this problem for me.  They have a new line of Belgian chocolate bars, which includes a dark chocolate bar filled with speculoos.  That’s right, a chocolate bar, filled with a spread made of cookies.  It is a dessert match made in heaven, and it can be yours for a mere 99 cents.

  1. Katia and Elizabeth, I’m pretty sure if I bought that spread it would go the way of nutella (I would eat it all in one sitting with a spoon and then get diabetes immediately).
    Natalie, using that as a macaron filling is GENIUS.

  3. Cookie butter is truly a dream come true. I love it so much, I used it as a macaron filling recently.

  4. Their speculoos spread is my kryptonite. So darn good. Trader Joe’s version is pretty good too, and at half the price it can’t be beat. Yum yum yum!
