I love making pasta dishes that have everything you need in them. I usually make a veggie broth/olive oil based sauce and throw in a can of chickpeas (probably want to use two cans if it's for a family) and one or two bags of frozen veggies. If I'm splurging, I also put in some sun dried tomatoes. I just cook everything together in a skillet with your standard Italian spices and throw it over whole wheat pasta. Easy, fast, healthy, and cheap!
Another go-to cheap and easy meal is veggie chili. I do a can of crushed tomatoes, a can of black beans, and a can of kidney beans. First, saute an onion and a few cloves of garlic in vegetable oil. Then add in a ton a cumin, chile powder, black pepper, and a bit of basil and oregano. I let the spices cook for about a minute, then add the tomatoes and beans. Let it cook for at least 30 minutes, but really you can leave it as long as you like. A few minutes before you're going to eat, add salt and lime juice. I like to eat it over brown rice. Sometimes I add in zucchini and yellow squash so I get my veggies, too.
I second paperdoll on the stir fries! I usually do asian-style stir fries, where I season with soy sauce, ginger, garlic, and (I know this sounds a little weird) maple syrup. As you can probably tell, I am a huge fan of frozen veggies so I literally buy the bag that says chinese or asian stir fry, throw it in a wok or large frying pan with cubes of tempeh or tofu, add my seasonings, and done!
