Alright, let me start off by saying I know how to cook basically nothing but I want to learn lol. My little fam needs to start eating at home for healthy and expense reasons. What are your favorite simple healthy recipes? I want them all!

Stir frys are really easy to make and a yummy way to eat lots of veggies. I like to combine lots of different vegetables and and some meat with olive oil and balsamic vinaigrette for flavor. Or you can omit the meat if you're vegetarian, the possibilities are endless.

I love making pasta dishes that have everything you need in them. I usually make a veggie broth/olive oil based sauce and throw in a can of chickpeas (probably want to use two cans if it's for a family) and one or two bags of frozen veggies. If I'm splurging, I also put in some sun dried tomatoes. I just cook everything together in a skillet with your standard Italian spices and throw it over whole wheat pasta. Easy, fast, healthy, and cheap!

Another go-to cheap and easy meal is veggie chili. I do a can of crushed tomatoes, a can of black beans, and a can of kidney beans. First, saute an onion and a few cloves of garlic in vegetable oil. Then add in a ton a cumin, chile powder, black pepper, and a bit of basil and oregano. I let the spices cook for about a minute, then add the tomatoes and beans. Let it cook for at least 30 minutes, but really you can leave it as long as you like. A few minutes before you're going to eat, add salt and lime juice. I like to eat it over brown rice. Sometimes I add in zucchini and yellow squash so I get my veggies, too.

I second paperdoll on the stir fries! I usually do asian-style stir fries, where I season with soy sauce, ginger, garlic, and (I know this sounds a little weird) maple syrup. As you can probably tell, I am a huge fan of frozen veggies so I literally buy the bag that says chinese or asian stir fry, throw it in a wok or large frying pan with cubes of tempeh or tofu, add my seasonings, and done!

For the chickpea cutlets, you can also put all of the wet ingredients plus the chickpeas and spices in the blender, then mix them with the dry to save time. Although mashing the chickpeas can be a good arm work-out!

Sorry my first two suggestions don't have measurements. I'm one of those people who does things mostly by eye, taste, and smell. Hope this helped a bit!

I just recently made a really easy Quinoa salad. Cook your quinoa in chicken broth instead of water. Chop up 4 carrots, 1 onion and 2 cucumbers. Mix everything together with a little pesto sauce. It's really yummy and quick! I usually make like 5 of these and eat them throughout the week.
