I just came back from three weeks at summer camp, and don’t get me wrong – I had the time of my life. I’ve been going to this summer camp since I was 10 years old, so it’s obviously doing something right. However, in all of my five years, I’ve had the same problem – a huge problem: the food. I can’t decide what’s worse, camp food or school food, but I’d put them both in the “terrible” category on the food pyramid. Camp is really great. People always seem really surprised when I tell them I’m going off to camp, but it’s one of those things where once you go you’re kinda hooked. Let me paint the picture for you. The best meal I had during the whole three weeks was a greasy box of pizza. In fact, at the time it seemed so delicious that I grabbed the box and hid in the bathroom eating it. If you don’t believe me, here’s an embarrassing picture below to prove it.
I may sound whiny and ridiculous, and I’m sure all of you are saying, “Suck it up!” in your head, but when you have to eat this food for three weeks, it does affect you and your stomach, take my word for it. I know that the biggest struggle in preparing camp food is the mass quantities and the obvious time restraint, and I’m certainly not saying that I would be able to put out meals for 300+ hungry campers a night, but below are some ideas I might apply if this was my job.
Chicken and brown rice: Chicken is easy to cook and so is brown rice; both are healthy and not too difficult to cook, healthy and versatile.
Pasta with pesto, peas and Parmesan: Super simple and tasty, takes no time, has tons of green and is a pleaser!
Baked vegetables with Parmesan, herbs and olive oil: Makes veggies more exciting and is not fried or overly oily!
So, If my camp is reading this, take my advice please, I’m begging you.
