Wanna know what drives me nuts?
You know when you go to a restaurant or fast food joint, and they ask you if you want to add something to your meal, and you’re all “ya sure, that sounds wonderful.” Then you get your bill and realize you were charged $2 extra for a shot glass sized container of sour cream. Especially when you are entirely aware that you could have bought a full tub of sour cream for the same price.
Maybe next time I’ll buy the full tub and divide it into small containers. Then head over to the restaurant and casually whisper to all the patrons, “don’t fall for the sour cream deal, I got you.”
I’d most definitely get kicked out.
It really seems like this whole ‘add on’ phenomenon specifically applies to Mexican food. For example, when you go to the pub and order natchos, you know darn well they’re going to ask you if you want to add chicken or beef for $5. The same applies to Chipotle, it’s $2 for guacamole. The added guac takes you from a $7 lunch to an almost $9 freakin’ burrito bowl.
Luckily for you, I have a solution.
Enter, Baja Shrimp Burrito Bowls.
Just, ugh. So good.
You still get the cilantro lime rice,
the yummy and protein packed, seasoned black beans,
and flavorful sauteed shrimp (which they don’t even have at Chipotle.)
Plus as much salsa and sour cream as you want.
Would you like some guacamole with that?

These bowls are great because they’re super easy to put together, once you have the rice cooked you can have these on the table in only 10 minutes. You can also use change up the protein; sub in chicken, beef, pork, fish or tofu, whatever floats your boat. I have also included recipes for my homemade taco seasoning, as well as easy pico de gallo and guacamole. Just click on the links in the recipe! Of course, if you’re short on time, you can always use store bought seasoning, salsa and guac, I’m all about giving you options.

Baja Shrimp Bowls:
Total time: 10 minutes
Total time where you actually have to be doing things: 10 minutes
What you need:
2 cups cooked basmati rice (hot)
Juice of half a lime
2 tbsp chopped cilantro
1 8 oz can black beans
1 package taco seasoning or 2 tbsp of my Homemade Taco Seasoning
1 tbsp vegetable oil
16 peeled and de-veined shrimp, tail on
Salsa, Guacamole and Sour cream for serving
Add the lime juice and cilantro to the cooked rice and stir to combine. Set aside and keep warm.
In a small pot add the black beans and heat over medium heat until hot, add about 1 tbsp of the taco seasoning and stir to combine. Set aside and keep warm.
In a large pan, heat oil over medium high heat until glossy. Add the shrimp and remaining taco seasoning and stir to coat. Cook until pink and cooked through, about 3-4 minutes. Turn off heat but leave in the pan to keep hot.
To serve, grab two bowls and scoop some rice into each bowl, follow by some of the seasoned black beans, and half the shrimp. Top with a big scoop of each of the salsa, guacamole and sour cream.
