Even though I’m not Irish, my fiancee’s family is. Plus, I love the color green, Boston, and bagpipes, so I feel like I’m practically Irish. With St. Patrick’s Day right around the corner, it’s important to prepare for the festivities. These are some recipes (including healthy ones!) which will totally help you celebrate one of the greatest holidays of the year:
1. Skinnier Shamrock Shake

It’s Shamrock Shake season, guys! I don’t even really like Shamrock Shakes, but I get one every single year pretty much because I can. Also, who doesn’t love milkshakes that are green? This recipe really lightens things up though, because we all know McDonald’s isn’t the most waist-friendly food chain. By using avocados, Stevia, and yogurt, you’ll add some nutrients and lose some of the fat and sugar.
2. Twice Baked Pesto Baked Potato

You wanna know what’s better than a baked potato? A TWICE baked potato with pesto sauce and mozzarella cheese! This may be adding some Italian flare, but the results are certainly green.

4. Shamrock Chips

Literally all you need to make these Shamrock chips is spinach tortillas, salt, and cooking spray. You can choose any kind of dip you prefer, but I would go with a hot dish of spinach and artichoke.
5. Cowboy Steaks with Guinness Sauce

If you’re hankering for a juicy, celebratory steak instead of the customary boiled meats that are served on St. Paddy’s Day (stews, corned beef and cabbage), then look no further. This steak is served with a Guinness stout sauce, so if you’re a fan of dark beers you will love this recipe. The flavors are really pronounced (it doesn’t taste like you’re chugging a pint, don’t worry) and the meat is tenderized by the acidity, so the results are awesome.
6. Chocolate Mint Pretzel Bites

If you’re looking for a simple, but decorative dessert to serve on St. Paddy’s, these pretzel bites are yummy and creative. They also call for Fluff, which is super good but hard to get off your clothes, just FYI.
7. Leprechaun Granola

Why stop at dinner or dessert? Celebrate St. Paddy’s day in the morning when you have this festive granola for breakfast (awesome with Greek yogurt, I highly recommend it). Whip up an Irish coffee, and you will have the most St. Patrick’s Day themed breakfast, ever.
8. Avocado Fries with Cilantro Lemon Dipping Sauce

I’m an avocado fiend, so when I see them fried, I become ecstatic. And worried. Because I will most certainly eat an entire plate of fried avocado if given the chance. This appetizer comes with a cilantro lemon dipping sauce which goes perfectly with the buttery richness of avocado and adds zesty flavor.
9. Chocolate Stout Cupcakes with Bailey’s Irish Cream Cheese Frosting

I can make my chocolate Guinness stout cupcake and eat it, too (with half as many calories!). Substitute part of the sugar and fat with applesauce and fat free sour cream, and you have yourself healthier, moist, and delicious cupcakes.
10. Boxty in the Pan

Boxty is amazing! I just tried it a few weeks ago at a local Irish pub and it might be my new favorite food. Boxties are like potato pancakes, but made with mashed potatoes, so they’re denser and richer. An Irish feast is surely not without boxty, I say (okay, I’m no authority, but I know yummy food when I eat it).
11. Mustard Champ

Champ is like mashed potatoes’ more nutritious sister starch. All you need is either cooked cabbage (or in this case, mustard greens), onions, salt and pepper. If you love sauerkraut at all, you will love champ.
12. Sour Patch Grapes (Leprechaun Candy)

I actually saw this recipe on a kid’s site, but I loved the idea of homemade sour “candies” so I obviously had to check it out. Lo and behold, all you need are green grapes and a package of lime Jell-O and you have the perfect, sour and sweet snack.
13. St. Patrick’s Day Spinach Pancakes
